It opened last November and tempts patrons at lunch, happy hour, and dinner with inventive menus featuring seasonal flavors and the best of the Pacific Northwest. Locals may recognize menu favorites from the longtime Vancouver, Wash., dining destination Beaches, with several items appearing as an homage to the restaurant and its owner, Mark Matthias, an investor in Jawfish. The full-service restaurant is also the only Le Petit Chef immersive dining experience in Oregon, offering diners a vibrant, dynamic culinary adventure that uses three-dimensional visual mapping to create an animated, entertaining journey through the prepared meal.
Rounding out the Mindaro campus is the Hyatt House Portland Airport, slated to open shortly, offering 112 suite-style guestrooms well-suited for extended stays.
