The iconic Bourbon Steak by Michael Mina announces its 10th location.
LAKE BUENA VISTA, Fla. – April 9, 2025 – The Walt Disney World Swan and Dolphin is opening its newest celebrity chef restaurant. Bourbon Steak by Michael Mina will be the latest addition to the hotel’s 23 restaurants and lounges.
The James Beard Award-winning chef and restaurateur will bring his celebrated, re-imagined modern take on the quintessential American steakhouse. Premium cuts of beef and seafood infused with global flavors will showcase the three primary elements of Mina’s culinary philosophy: product, technique, and presentation. The restaurant menu will also feature signature desserts accented by world-class beverage offerings.

As The Mina Group continues to expand its footprint globally, the restaurant will be the third location in Florida, including Miami, and a recently opened location in Delray Beach.
Bourbon Steak will replace Shula’s Steakhouse in the Walt Disney World Dolphin, which will take reservations through June 14, 2025. Michael Mina’s anticipated debut of Bourbon Steak is mid-summer.
